Why bake gluten free?

Gluten basically is a type of protein found in wheat, barley, rye and related grains. Gluten is sticky and is the main reason, along with yeast, why you can get dough to rise and be light and fluffy. About 1 in 200 people suffer from a condition known as “celiac disease”. Celiac’s is a condition where gluten can’t be broken down by the body and causes various health related issues. However many other people can suffer from a “gluten intolerence” where they can eat too much gluten and have similar issues. Also some people are just plain allergic to wheat. A gluten-free diet is a diet that excludes gluten and uses other types of flours (rice/almond/buckwheat/etc…) in baking.

Baking without gluten is more difficult and takes much more skill to still get a delicious end product.
